Plants grow best when soil is disturbed very little. This allows soil organisms to continue doing their great work.
Therefore removing old plants with larger roots can be a little difficult and I show a few ways to do this, with minimal disturbance.

Sometimes you cannot avoid lifting the soil a little, and in that case it's good to tread it down again. Harvesting bulbs of garlic is an example.

Sometimes it's good simply to cut just below ground level, as with tomatoes and broad/fava beans.
