Celery is actually pretty thirsty - when you add food colouring, it travels up the stalk!

The water moves up the celery stalk through tiny little tubes called xylem. And when I say tiny, I mean really tiny! They're like the size of a hair on your head! It brings the food colouring with it, which is why the celery starts to change color!
Before you know it, you got some seriously cool looking celery. It's like magic! Or science. Or magic science! Either way, it's pretty darn awesome.
It's a pretty neat little trick, isn't it? So, next time you're snacking on some celery, take a moment to appreciate just how thirsty it really is.
